Vegetarian Shepherd's Pie

1 Quart casserole dish, sprayed with vegetable spray
1 Sauteeing pan (about 12 inches)
1 Small Baking Sheet
Large metal spoon or metal spatula

Preheat oven to 350 degrees Farenheit

2 cups instant mashed potatoes made according to package directions
1/2 package Smart Choice Ground TVP
1 8oz. package frozen petite peas
1 cup sliced white mushrooms
1/2 cup chopped red oinion
2 T minced garlic
1 T butter or margarine
1 T worchestershire sauce
1/4 cup ketchup


On medium heat, melt butter or margarine in sautee pan. When melted, add onion and garlic. Stir until onions are translucent. Add package of peas, stir until defrosted and bright green. Add mushrooms, stir until they begin to soften. Add vegetable crumble, worchestershire and ketchup. Stir until heated through. Spoon/scrape into casserole dish. Top with mashed potatoes, either smoothing out or making little "peaks" - if you want to be very fancy you're supposed to take a piping bag and make fancy stars and rosettes, but I never have.

Place casserole on baking sheet. Place baking sheet on middle rack of oven.

Bake for fourty minutes.

Serve while hot.

The real significance of this is - it is a vegetarian recipe that Jack will EAT!
